Churros

Churros

If you're just as upset as we are that Costco doesn't sell their churros anymore, then look no further! These churros are easy to whip in under an hour and are the perfect dessert or snack. 

Ingredients: 

1 cup water 
1 tbsp granulated sugar 
1/4 cup unsalted butter, cubed 
1 tsp salt 
1 large egg 
1/2 tbsp vanilla extract 
1/2 tbsp almond or walnut oil 
vegetable oil for frying 
1/2 cup cinnamon sugar 
1 cup flour 

Heat up 1 1/2 inch vegetable oil in a large pan to 360 degrees. Add water, butter, sugar, almond/walnut oil, and salt to a large saucepan and bring to a boil over medium heat. Add flour, reduce heat to medium/low while constantly stirring. Transfer mixture to a mixing bowl and let cool for 5 minutes. Add vanilla and egg to the mixture and blend together until smooth. Place mixture in piping bag and cut 6 inch pieces into the hot vegetable oil. Cook each side for about 2 minutes or until golden brown. Remove from oil and coat in cinnamon sugar. Optional - serve with caramel or chocolate for dipping. Enjoy!
