If you've never had a cookie that melts in your mouth, you're really missing out! It is hard to believe these cookies are gluten free with their sweet, but chewy insides. You might want to hide them or they'll be gone before you know it!
Ingredients:
2 1/4 cup almond flour
1 tbsp almond oil
1 cup granulated sugar
pinch of salt
2 large egg whites
1/4 tsp lemon juice
1/2 tsp almond extract
confectioner's sugar, for coating
Preheat oven to 300 degrees. Stack two cookie sheets to prevent the cookies from browning and line with parchment paper. Mix together almond flour, sugar, and salt. In a separate bowl, whisk together egg whites, almond oil, lemon juice until white peaks are formed. Add beaten wet ingredients to the dry ingredients and stir until a sticky dough forms. Knead if necessary. Roll dough into 1 inch balls and coat in confectioner's sugar. Bake for 30-35 minutes. Remove from oven, let cool, and enjoy!
