Grandma's Lemon Squares

When life gives you lemons, you make grandma's famous lemon squares. These juicy desserts will be sure to impress at any function. The flaky crust combined with the sugary inside are mouthwatering. 

Ingredients: 

1 cup flour 
1/2 cup butter or margarine 
1/4 cup confectioners' sugar 
2 eggs 
1 cup granulated sugar 
1/2 tsp baking powder 
1/2 tsp salt 
2 tbsp freshly squeezed lemon juice 
1 tbsp almond oil 

Heat the oven to 350 degrees F. Measure flour out by sifting or using the dipping method. Blend flour, butter, and confectioners' sugar thoroughly. Press evenly in a square 8x8x2" pan. Bake 20 minutes. Beat the rest of the ingredients together together. Pour over crust and bake 20 to 25 minutes more. Do not overbake! Once cool, sprinkle with confectioners' sugar.
