Hummus is one of our favorite summer snacks! We love topping ours with fresh tomatoes and herbs from the garden. These recipe can be whipped up in a matter of minutes.
1 can chickpeas, low-sodium or no salt added
1/4 cup reserved liquid from can of chickpeas
1 medium bulb roasted garlic (8–9 cloves)
3/4 cup of raw walnuts
1 – 2 tsp cayenne pepper
2 tbsp walnut oil
1 tbsp water or lemon juice
Roast the garlic and let is slightly cool off. In a food processor, combine walnuts and garlic and pulse until well chopped. Rinse and drain the chickpeas (don't forget to reserve some of the liquid) and add to the food processor. Add the rest of the ingredients and pulse until smooth. Add more walnut oil for a smoother texture. Store in an airtight container in the fridge. Serve with pita chips or crackers.
