Stuffed Peppers

Wanting to change up what's on the menu for dinner? Try these tex-mex inspired healthy stuffed peppers filled with vegetables and goodness in every bite. 

Ingredients: 

4 bell peppers (can be any color/variety) 
1 tbsp almond oil 
6 cups ground beef 
1 package Spanish rice 
1 can black beans (drained)
3/4 cup pepper jack cheese 
1 cup corn 

Preheat smoker (or oven) to 325 degrees. Wash and slice peppers lengthwise. Drizzle oil over peppers and rub into the outside. Add ground beef, seasonings, corn, and black beans to a skillet. Cook on medium for 10 minutes. Place mixture in each pepper and smoke for 35 minutes. Remove from smoker and garnish with cheese until melted.
