
Veggie Stir-Fry
Perfect for a quick and easy weeknight dinner!
Ingredients:
- 3 cups mixed vegetables (fresh or frozen)
- 2 tbsp refined almond oil
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp ginger powder or fresh grated ginger
- Cooked rice, for serving
Instructions:
- Heat almond oil in a large skillet or wok over medium-high heat.
- Add vegetables, stir-fry 5–6 mins until tender-crisp.
- Stir in soy sauce, garlic, and ginger.
- Serve immediately over rice.
